It is simply the whole bean ground, nothing added, nothing taken away. When the cacao beans are ground, they form into paste, hence the name ‘Cacao paste’. What’s the difference between
COCOA, POWDERED CACAO AND CEREMONIAL CACAO?

Cocoa
It’s likely you’ve heard of cocoa (pronounced ‘koko’), as it’s often confused with cacao (pronounced ‘kakaow’). Cocoa comes in powered form and has been roasted for long periods at very high temperatures, causing change in the molecular structure of the bean, and lowering its naturally abundant nutritional value. Often found mixed with sugar in a tin to create a commercial-style hot chocolate, however provides minimal nutrition.

Powdered Cacao
Although you can get powdered cacao organic, usually from health food stores, it has been processed to commercial standards which removes the bean’s natural fat – cacao butter. Many of the living enzymes, healthy fats and most of the subtle energetic properties of cacao have been destroyed in the process. It still contains the health benefits of antioxidants as well as magnesium and potassium.

Ceremonial Cacao
Ceremonial-grade cacao in the form of a paste (often in a block) is made by fermenting and lightly toasting the beans, then hand-peeling the husks, followed by stone-grinding them down to a paste, then being set into a block. There are so many heath benefits of ceremonial cacao, see below, are far more potent than powdered cacao.
